If you get a flavorful bird to begin with, this is the perfect brine.
If you live somewhere where you can't get a good organic, free range
bird, then you will want to boost the flavor with some of the brines
below.

You're in Dallas now, right? How's the food scene down there? I
haven't been there since I spent the summer of 94 working between my
two years of grad school. I found some cool stuff, but Dallas in the
summer was more than I could handle.
