Hoos Tailgating With Mom - Mushroom Dip & Club Rolls

When Virginia opens ACC play tonight at Georgia Tech, there certainly will be tons of Hoo fans in Atlanta rooting the team on. But Thursday night games make it hard to travel long distances so there are probably plenty of Cavalier backers ready to watch the showdown on ESPN. With that in mind, this week's tailgating recipes have a make-it-at-home living room twist.

When you're hosting game-watching parties, there are a couple of things to remember. First, you have to have some sort of pre-meal snack food - sure chips, pretzels, and the like work, but that's kind of boring. Second, your meal for the night needs to be user friendly - that is to say, finger foods are a good thing.

The Sabre has you covered on both fronts this week with a pair of recipes that are perfect for football watching parties.

As you might expect, let's start with the appetizer portion of the night.


Mushroom Dip

4 slices bacon
3 cups sliced fresh mushrooms
1/2cup finely chopped onions
1 garlic clove, minced
2 tablespoons flour
1/8 teaspoon salt
1/8 teaspoon pepper
1 8 oz. cream cheese, cubed
2 teaspoon Worcestershire sauce
1 teaspoon soy sauce
1/2 cup sour cream

This warm dip is a perfect way to start off the evening at your living room tailgate. First, cook the bacon until it is crisp. Save 2 tablespoons of the drippings. Crumble the bacon into bits and sit aside.

In the pan with the drippings, cook your mushrooms, onions, and garlic until tender and most of the liquid has evaporated. Next, stir in the flour, salt and pepper. Add the cream cheese cubes, Worcestershire sauce, and soy sauce. Heat the mixture while stirring slowly. Once the cream cheese mixture is well blended, stir in the sour cream and bacon.

Once you have all of the ingredients mixed well, just keep the dip on low heat. Do not boil. Serve the dip warm with your favorite crackers - you can also use toasted bread or crusty French loaf bread.

That'll keep you and your guests happy and snacking all night. But you want to have a main dish to serve as well. How about sandwiches? That's never a bad idea, especially when you try these yummy hand-held rolls.


Heated Club Rolls

1 package rolls
1 package deli sliced wafer thin ham
1 package deli sliced wafer thin turkey
1 package deli sliced wafer thin chicken
American Cheese
Cheddar Cheese
Swiss Cheese
1 stick margarine
1 teaspoon mustard
1 tablespoon poppy seed
1 tablespoon chopped onion

There are several varieties of rolls that could work with this recipe, but any style of dinner rolls or miniature sub-style rolls work best. Once you've settled on your bread choice, cut the whole package of rolls in half length-wise as if you're making tiny little sub sandwiches. Remove the top half of your “buns” and sit aside. Place the bottom half of the sandwiches in a baking dish.

Next, you will take your deli meats and alternately layer the ham, turkey, chicken, and cheeses. Again, this is just like making a sandwich. Replace the top layer of rolls.

In a saucepan, melt 1 stick of margarine. Then, add 1 teaspoon of yellow mustard, 1 tablespoon of poppy seeds, and 1 tablespoon of chopped onions. Stir the ingredients well and brush this mixture over your rolls - make sure to use all of the sauce. Bake the rolls at 325 degrees for 15 to 20 minutes or until light golden brown. Serve warm for the perfect hand-held sandwich snacks.

The rolls are easy to eat while watching a game and they really go with anything from potato chips to the potato salad from Week 1. Get creative with your side dish and your guests will be passing out high fives for more than just touchdowns!
